This coffee comes from the Espirito Santo region, the "smallest" brazilian region, better known as an historic Robusta production region. But here, like everywhere else, things change and lots of farms tend to produce Arabica nowadays. They are smaller that in the better known region, 15 to 20 hectares. And FAF decided to work there to help communities raise the quality of their coffee and life.
In this zone, at the moment, only 40 to 50% of the production meets the grade 16 size which is required to join the specialty market and up to 25% is grade 14 and 15. These "little" beans can offer the same quality so instead of letting them join the low grade quality mass market, they decided to decaf them.
The decaf method is the CO2 one, known as the one with the less impact in the cup.
