Jorge Misael Ochoa spent time in the USA but came back in Honduras in 2013 where he bought this 10ha farm to live in the mountains with his family. 4h are used for coffee production and the rest for avocado.
The coffee is processed at the farm where it is depulped right after picking and put to fermentation in dry tanks, then dried in parabolic dryers for 12 to 16 days. The coffee is regularly mixed and bad seeds are picked out. This provides a really refined and clean cup.
Parainema varietal has been developed in Honduras. Highly productive and resistant at medium altitudes, it is well appreciated in this region. The coffee looks quite specific, long and pointy.
