When Felipe Contreras' father set up his farm in 2012, bourbon was the first variety planted. Today, Felipe is the one in charge of the farm. Gradually, he diversified the varieties, but his bourbon has remained emblematic.
The Pile Natural process is quite unique to Finca Gascon. Felipe's Pile Natural process involves creating a thick layer of whole cherries, which he leaves to ferment in water for 72 hours, where cherries are usually washed, before drying them. Like all the farm's natural processes, the cherries then dry for 20 to 25 days.
On the farm, Felipe is very influenced by permaculture. He aims for the most sustainable production possible, under shade and in symbiosis with his ecosystem, to produce cups with a complex profile.
