This coffee comes from a cooperative that I've been lucky enough to visit during my trip to Colombia. It has the peculiarity to cup all the lots from all the farmers and not blend the best of them. It offers technical support to farmers as well as financial help for those who want to invest in their infrastructure in order to raise the quality of their lots. The weather if quite rainy during harvest season which is a big problem during fermentation and drying. The parchment coffee needs to be as isolated as possible from the weather condition is order to produce the best quality.
