This coffee comes from a privately owned washing station. Its particularity : Having a dedicated production line and team for specialty coffee production.
Thanks to changes in the green coffee selling rules in the country, it is now possible to ask for specific methods to produce coffee and take more risks. And that's the case here. For the first time, I was able to cup an ethiopian honyed, and what a lovely surprise ! This lots has been perfectly taken care of and you get all that's great with this origin plus the advantages provided by the honeyed process without the flaws. Very floral and super clean of course but fruitier than the usual Yirga and much more body ! A total success.
Cherries that arrive at the station are floted to clean and separate by denity cherries (floating cherries have to be taken out). Then a standard high quality process is followed for fermentation and drying. Another special aspect of this station, the farmers that are part of the "quality" group receive a second payment when the coffee is sold, in exchange for the added attention given to picking and overall selection of cherries. And last but not least, and it's not uncommon in this region, the washing station provide ground water to the collectivity that is lacking drinkable water.

Une première commande chez Cataldi, et la première fois que mon café fait à la maison a du (bon) gout !
Résultat impressionant malgré une extraction a l'arrache: Porlex -> eau bouillante -> versé dans un mug, filtré comme un degueulasse avec les moyens du bord, voire pas du tout...
