This coffee is very specific and only found in this region. At the beginning of coffee exports, coffee was loaded onto boats that went around Africa to reach Europe, facing the marine moisture, that puffed and slightly fermented the coffee beans. With the advent of modern cargo and the Suez Channel, the journey delay was reduced and the board storage was greatly improved... at the expense of the coffee !
Then the Indians had the idea of changing the processing by putting cherries in bags under shelters exposed to moist winds of the monsoon. This treatment has the effect of restoring the swollen and yellowish characteristic of the green beans. At the end of treatment, the cherries are sorted to eliminate those who improperly fermented.
